No Bake Peanut Butter BArs

An idea of tatsy and healthy recipe without baking to satisfy your cravings for sweets at any time! This recipe is vegan, gluten-free and high in protein.

Ingredients:

- 200g Peanut Butter Smooth Turtle.

- 150g of coconut flour

- 11 dl of maple syrup


Chocolate and peanut butter ganache :

- 100g dark chocolate

- 80g Smooth Turtle peanut butter

- 2 tbsp of coconut oil





Preparation:

In a medium bowl, mix peanut butter and maple syrup until smooth.


Stir in coconut flour. The dough will become thick, dry and difficult to mix with a spatula, so use your hands to knead the dough into a ball.

Press the ball of peanut butter dough evenly onto the prepared pan. You want to cover the entire pan with an even layer of peanut butter dough. Smooth the top of the layer with the back of a spoon.

Place in the freezer while you prepare the chocolate ganache.

In a small bowl, mix the 70% vegan dark chocolate pieces with the melted coconut oil and peanut butter.


Melt in a double boiler or microwave in 30-second bursts, stirring between each to prevent the chocolate from burning.

Remove the baking dish from the freezer and pour the chocolate ganache over the peanut butter layer.

Spread evenly with a spatula.

Return the dish to the freezer for 10 minutes or until the chocolate ganache is set.

Cut the entire batch into 16 peanut butter bars.


Storage:

Store bars in an airtight container in the refrigerator for 1 week or freeze. Thaw for 2 hours before eating at room temperature or enjoy half frozen. Note that the peanut layer will dry out slightly after freezing. The texture will be more like shortbread, but still delicious.
